The tax imposed on restaurants/cafes is designed to be proportional to the result of the rating system based on food waste, giving the grade A/B/C/D evaluation. The less waste restaurants will produce, the higher their rating and the smaller the tax will be. This pilot policy proposal is designed for the region of Ile de France.
